Decided to start researching a little more about the Keto diet. I like what I am reading!!! So..... now to test some recipes and come up with some of my own. I just tried a delicious grilled cheese sandwich which I will be making again and again!!!
Grilled Cheese - Keto style!!!
1 head of cauliflower
1/2 cup fresh Parmesan cheese
2 tsp fresh herbs of your liking (I used basil, oregano and parsley)
1 tsp black pepper
1 tsp garlic salt
Cheese (your choice, but I chose a good quality sharp cheddar - which I actually made :)
1 tsp butter
Rinse the cauliflower and trim off the greens. Place the cauliflower in a food processor and pulse until it looks like rice. Place in a microwave safe dish and microwave on high for 3 minutes. Stir, then microwave again for 5 minutes. Let the cauliflower cool slightly. Place in muslin cheesecloth and squeeze the heck out of it. The more liquid you get out, the better result you will have. If you don't have cheesecloth just place in a strainer and press with your hands or a spoon.
