Intro to Hard Cheese, Cheese Curds, and Homemade Crackers

There are two prices for this class, one for a video class via zoom where you get the ingredients and participate along side us as we do this cheese making session live. The other price is for those who would like to come to my farm kitchen in North Fort Collins. We will start by making delicious cheddar cheese curds or Italian cheese curds that use simple ingredients and minimal equipment. It only needs to age 1 week, or it can age for years (if you are patient). You will be able to make cheese curds to eat and sample the minute class is over. You decide if you want to eat all of the curds, or, turn your curds into a wheel to eat later. Either way, how can you lose, it's fresh cheese? While we are waiting for the cheese to come together, I will teach you two homemade cracker recipes, one that is gluten-free and low in carbs, and one that will be an amazing addition to any cheese plate. Plus, you will learn how to age cheeses, wax a mini cheese wheel, and find out how to make a cheese press. Don't fret about the ingredient list - all you need to supply is your milk of choice; some seasonings (which I will have a list of recommended ones); and a few other common items. An ingredient and equipment list will be emailed as soon as you sign up. The other, less common ingredients will be available to pick up the day of the event (included in the cost), or can be mailed for an extra fee as long as you sign up a week before class starts. There will be wine/beer pairing recommendations sent out as well if you care to partake.
