Pear, Gorgonzola and Walnut Salad

About the Recipe


  • 2 cups mixed baby lettuces

  • 1 medium ripe Bosc pear, thinly sliced

  • ¼ red onion, thinly sliced

  • 2 tablespoons crumbled Gorgonzola Cheese or thinly shaved pecorino cheese

  • 2 tablespoons toasted walnuts, coarsely chopped

  • 2 tablespoons craisins or dried blueberries

Balsamic Dressing Ingredients:

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon honey or maple syrup

  • 1 garlic clove, grated

  • 1 teaspoon Dijon mustard

  • ½ teaspoon sea salt

  • Freshly ground black pepper

  • 4 tablespoons extra-virgin olive oil


Step 1

In a small bowl, whisk together the vinegar, honey, garlic, mustard, salt, and several grinds of pepper.

Step 2

Drizzle in the olive oil while whisking and continue to whisk until the dressing is emulsified.  Add the sliced onions and let marinade for at least 10 minutes.  Add lettuce and gently toss to combine.

Step 3

Top with sliced pear, Gorgonzola, walnuts and dried fruit. Serve immediately.
